01 / ABOUT THE PLACE

About this place

Meats grilled over glowing binchotan charcoal and scented with cherrywood smoke form the core of Bar Smoked Kotobuki Ibushikobo. For the charcoal-grilled Japanese Black Wagyu, the richness of the beef is infused with charcoal savor and delicate cherry smoke, served alongside a sauce simmered down from beef tendon, aromatics, and red wine. The grilled Iwate duck also reflects meticulous culinary craft: hearts and thigh meat arrive on skewers complemented by a reduction of poultry stock and smoked liver, brightened with the fragrant edge of sansho pepper.

When it comes to pork, the eye-catching tornado steak features tender Iwanaka pork fillet wrapped in house-cured bacon and grilled with yuzu butter. The marriage of smoky charcoal char, savory pork, and refreshing citrus butter leaves an enduring impression as the meal transitions from appetizers to the main course.

Before moving to substantial courses, an array of small smoked plates pairs naturally with a drink. The kitchen turns out fragrant bites like slow-cooked smoked oysters marinated in oil and crowned with salmon roe, assorted smoked cheeses, and house-smoked salmon. Sipping beer, wine, or cocktails alongside these aromatic morsels captures the bar's signature appeal.

The compact interior combines counter seating with tables, placing guests close enough to appreciate the owner-chef at work. Alongside dinner service, the restaurant offers lunch courses on a strict reservation-only basis, making it a spot worth booking ahead for an unhurried, flavor-forward meal.
